Monsoon Delights : मानसून चल रहा है तो जरूर आपको रोज कुछ न कुछ fried खाने की क्रेविंग तो जरुर हो रही होगी । वैसे तो मॉनसून में तला भुना खाने का काफी मन करता है। बारिश का मौसम और मस्त तला हुआ पकवान खाने का आनंद ही अलग है। इसलिए हम लाए है आपके लिए ऐसी ही स्वादिष्ट और मजेदार पूरियां जो स्वाद में बहुत ही लाजवाब होती हैं और इन्हें बनाना काफी आसान होता है। May–June की भीषण गर्मी से परेशान हर कोई बरसात में ठंडक भरे मौसम का इंतजार करता है। ऐसे में बारिश में कुछ टेस्टी खाने का मन भी बहुत करता है जैसे में कचौरीयां, गर्मागर्म पूरियां मौसम के मज़े को दोगुना कर देती है। खासकर बारिश के मौसम में अन्य अलग अलग तरह की ट्रेडिशनल पूरियां बनाई जाती हैं जिनका मजा इसी मौसम में आता है। आइए जानते हैं ऐसी ही कुछ पूरियों के बारे में: मीठी पूरी इस पूरी को बनाने के लिए गेहूं के आटे में चीनी की चासनी, बारीक कटी dry fruits, इलाइची पाउडर डालकर अच्छे से आटा लगाते हैं फिर गूथे हुए आटे की पूरियां बनाते हैं। ये खाने में बहुत स्वादिष्ट होती हैं। मालपुआ इसे बनाने के लिए आप मैदा या आटे में चीनी की चासनी, इलायची पाउडर, milk powder, dry fruits, मैश किया हुआ केला, दुध डालकर अच्छी तरह फेंट लें फिर इसे 5 घंटे ऐसे ही rest करने दें , deep fry कर इसे बाहर निकाल लें। अब आप गर्मागर्म मालपुआ का मजा रबड़ी के साथ ले सकते हैं। पालक पूरी इसे बनाने के लिए आपको उबला हुआ पालक मिक्सी में बारीक पीस लेना है। अब पिसे हुए पालक में हल्का नमक, घी, जीरा, डालकर आटा लगा लें फिर पूरियां तैयार कर लें। इसे आप आलू की सब्जी या छोले की साथ सर्व कर सकते हैं। चना दाल पूरी रातभर भिगोई हुई चने की दाल को बारीक पीस लें फिर कढ़ाई में जीरा, तेल डालकर हरी मिर्च का तड़का लगाते हुए हल्का सा भून लें फिर उसमें नमक, हल्दी पाउडर डालकर कुछ देर भूनने के बाद इसे बाहर निकाल लें फिर आटे की लोई बनाके इस स्टफिंग को लोई में भरके तेल में deep fry कर लें । मेथी की पूरी इसे बनाने के लिए आटे में कद्दूकस किया हुआ आलू, अजवाइन,नमक, और कसूरी मेथी डालकर आटा लगा लें फिर इसकी गर्मागर्म पूरियां निकाल लें।
